Chocolate Chip Coconut Cookie Bars


  • 2 1/8 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 stick butter, melted and cooled to room temperature
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • 3/4 cup shredded coconut
  • Sea salt, for sprinkling over bars


  1. Pre-heat oven to 325 F.  Grease 13×9 pan,
  2. Combine flour, baking soda, and salt in small bowl.
  3. Beat butter, granulated sugar, brown sugar and vanilla extract in large bowl.  Add eggs, one at a time, beating well after each.  Gradually beat in flour mixture.  Stir in chips and coconut.  Spread into prepared pan.
  4. Bake for 20-25 minutes or until golden brown.  Remove from oven and sprinkle with sea salt.  Cool in pan on wire rack.
  5. Cut into bars.
