Serves 2 people:
- 1 medium onion
- 1-2 apples (1 apple serves 2 people)
- 1 bag (‘store size”) of spinach/chard/or other favorite green
- 1/2 cup walnuts
- 3-4 Tbsp. Dijon mustard, to taste.
4 Soft shell taco/tortilla shells heated for 10-15 seconds
Grated Cheddar cheese
Assemble: some cheese + 1/4 mixture on tortilla shell; roll up into fajita.
