Prep time: about 15 minutes
- 4 oz feta cheese
- 2 lb seedless watermelon slices (1/2 medium watermelon)
- 8 oz grape tomatoes
- 3 Tbsp olive oil
- 2 tsp white balsamic vinegar
- 1/2 tsp kosher salt
- 3 cups arugula greens (about 5 oz)
- 1 cup sliced red onions, quartered
Directions:
- Cut feta and watermelon into small bite-sized pieces
- Cut tomatoes in half
- Whisk oil, vinegar, and salt to blend; set aside
- Place arugula, onions, and tomatoes in salad bowl
- Add vinaigrette; toss to coat
- Add cheese and watermelon; serve.
Note: I served vinaigrette on the side so we could add as much or as little as we wanted. The white balsamic was an interesting flavor.

We just had this with dinner tonight. I definitely recommend it – it was very flavorful, yet light and refreshing. Thanks for checking out my blog.
