Watermelon Feta Salad

Prep time: about 15 minutes

  • 4 oz feta cheese
  • 2 lb seedless watermelon slices (1/2 medium watermelon)
  • 8 oz grape tomatoes
  • 3 Tbsp olive oil
  • 2 tsp white balsamic vinegar
  • 1/2 tsp kosher salt
  • 3 cups arugula greens (about 5 oz)
  • 1 cup sliced red onions, quartered

Directions:

  1. Cut feta and watermelon into small bite-sized pieces
  2. Cut tomatoes in half
  3. Whisk oil, vinegar, and salt to blend; set aside
  4. Place arugula, onions, and tomatoes in salad bowl
  5. Add vinaigrette; toss to coat
  6. Add cheese and watermelon; serve.

Note: I served vinaigrette on the side so we could add as much or as little as we wanted.  The white balsamic was an interesting flavor.

Nutrition (per 1/4 recipe): 270 calories, 17 g fat, 25 mg cholesterol, 470 mg sodium, 26 g carb, 3 g fiber, 7 g protein
