Triple Chocolate Cake

  • 3 eggs
  • ¾ cup sour cream
  • 1 cup water
  • 1 cup (2 sticks) margarine
  • ¼ cup cocoa
  • 2 cups flour
  • 2 cups sugar
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 cup chocolate chips

Preheat oven to 350 degrees.

Combine eggs and sour cream in small bowl and beat lightly.  Combine water, margarine and cocoa in saucepan.  Bring to a boil over medium heat, stirring occasionally.  Lower heat and simmer 2 minutes.

Combine flour, sugar, salt, and baking soda in large bowl and mix well.  Mix in sour cream and egg mixture; stir in chocolate chips.  Then, stir in liquid mixture gradually.  Mixture will be thin and chocolate bits will go to the bottom.  Pour into 13x9x2 pan (3 layer pans will also work well – shorten baking time if doing this).  Bake 30 – 35 minutes at 350 degrees.

Icing:

  • 1 pound 10x sugar
  • 2 – 3 Tbsp cocoa (approx.)
  • ½ stick softened margarine
  • 1 tsp vanilla (approx.)
  • Boiling water

Mix first 4 ingredients well.  Add a little boiling water at a time until mixture gets to a spreading consistency.
