Pumpkin Roll

Grammy’s Pumpkin Roll

Heat oven to 350 degrees.

  • 1 cup flour
  • 1 tsp baking soda
  • 1 cup sugar
  • 1 tsp cinnamon
  • 3 eggs
  • 2/3 cups pumpkin (canned)

Mix sugar, eggs, and cinnamon.  Add pumpkin.  Add baking soda and flour.

Grease jelly-roll pan (10”x15”), then line with wax paper, then grease the wax paper.  Cook 15 minutes, until toothpick comes out clean.

When done, turn out on a towel on which powdered sugar has been sprinkled.  Roll up in town while still warm.  Let it cool.

Combine the following to make the filling:

  • 4 Tbsp melted butter
  • 1 tsp vanilla
  • 1 cup confectioner’s sugar
  • 8 oz cream cheese (room temperature)

Unroll cooled cake, spread on filling, and re-roll cake (without towel).  Refrigerate.
