Hot Milk Cake

(Grammy’s Recipe)

  • ½ cup margarine (1 stick)
  • 1 cup milk
  • 4 eggs
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking powder

Heat oven to 325 degrees.

Combine milk and margarine and heat on medium heat until hot (be careful it doesn’t start to boil and boil over the pan).

Meanwhile, beat eggs.  Gradually add sugar, beating constantly.  Add vanilla.  Mix flour, salt, and baking powder together then add to egg mixture.  Gradually add milk mixture and beat slowly until just smooth.

Grease 2 loaf pans and line bottoms with waxed paper.  Grease paper.  Pour batter into 2 pans.

Bake at 325 for 45-50 minutes.  Test with toothpick.  Should peel away from sides of pan when done.  Let cool on cake rack 10-15 minutes, then dump on rack and peel wax paper off.
